Ingredients

  1. All Purpose flour(maida) or wheat flour – 1 cup
  2. Salt to taste
  3. Ghee – 2 tsp
  4. Pepper / jeera powder – 1 tsp
  5. Red chilly powder - 1tsp
  6. Oil for deep frying

Method

  1. Add Ghee, pepper/jeera powder, salt, red chilly powder to the flour and make a sough by adding little water
  2. Keep this dough for half an hour
  3. Make small balls from this dough
  4. Roll these balls into chapati size and cut into required shapes
  5. Deep fry them till they turn golden brown
  6. This can be stored in airtight container and will last for 2-3 weeks
Ingredients
Potatoes- 4
Boiled peas-1/2cup
Oil
Salt
Green chillies-2
Chilli powder-1 spoon
Garam masala -1spoon
Jeera powder-1spoon
Finely chopped coriander - 2 spoon




Method

Pressure the potatoes in a cooker for a few minutes . Peel and smash the potatoes.

To the smashed potatoes add peas,salt to one's requirement ,coriander, jeera powder, chilli powder,garam masala, chopped chillies and mix well. Make the tikkis of 1/4 th of your palm size.

Brush the tawa with little oil and keep tikkis on it. Brush the tikkis with oil till they get roasted equally on the both sides.

Note: Roast the tikkis approximately for 3-4 minutes each side.
Ready to eat with tomato sauce . Serve hot

Ingredients

Stuffing requires

Boiled potatoes
Onions - 1 cup
Coriander
Jeera powder
Garam masala
Salt

Paani requires

Mint leaves - 1/2 cup
Coriander - 3/4 cup
Ginger - 1 inch
Green chillies - 2 or 3
Tamarind - 1 spoon
Jaggery - 2 spoons
Cumin powder 
Garam masala
Black pepper

 *here all spice powder measure about 1.5 teaspoons

Take a bowl  , add boiled and peeled potatoes and smash it well. To this now add finely chopped onions,coriander, jeera powder, garam masala,salt to one's requirement and mix well such that it has no lumps.

Take a mixi jar and add all the ingredients  mentioned under the column paani and grind coarsely .Later squeeze out the juice from the grinded spinach and add 1 or1.5 litres of water to the extract.

Note:  One can alter the sweetness or tangy taste by altering the amount of jaggery or tamarind .
*Chat masala can be used to get the taste, of paani like chats vendor or street side chats.


I've bought readymade pooris from the local mart . 
Assemble the cracked poori add the potato stuffing,boiled peas,mixture,sprinkle some coriander (if required)later pour the pani to the poori . Ready to serve.

Boiled Potatoes -chopped cube/ triangle shape 1 cup
Tomato puree - 1/2 cup
Onion - 1/2 cup
Oil
Maida -  3 spoons
Corn flour - 2 spoons
Salt
Pepper
Chilli powder
Water- 2 spoons
Capsicum
Ginger garlic paste
Soya sauce
Tomato ketchup
Chilli sauce

Method

Make a batter by mixing maida , corn flour,salt ,chillie powder and water.

Now heat the oil and dip the potatoes into batter such that coating should cover potatoes and shallow fry in the oil till they turn brown colour.

Take a pan add oil, ginger-garlic paste ,onion , tomato puree , all the mentioned sauces and saute for few minutes.

Later add salt, pepper and capsicum fry till they turn crisp .At the end add fried potatoes and cook for 60 seconds .Ready to eat.











Ingredients


Onion- 1 cup chopped lengthwise
Besan powder- 1 cup
Water
Salt
Chillies -(4-6)
Rice flour - 2 spoons
Daniya powder- 1 spoons
Curry leaves

Method

Take onion in a bowl add besan powder, salt, rice flour,chillies ,dainya powder,curry leaves and mix well and allow it marinate for 30 minutes.Later add water slowly and mix well.

Take deep frying pan add oil then put pokaras into oil and fry well.Ready to taste with curry or rasam even with coffee.

Ingredients

Potato ( chopped length wise )
Salt
Chilli powder
Oil

Method

Take chopped potatoes add salt all over and leave for an night in a freezer,
And after freezing process remove the water content from potato using cloth.


Now heat oil and fry the potatoes partially ,shift aside.
Refry the potatoes till the colour changes to golden brown.

Transfer the fried fries into a container add salt and chilli powder close the lid mix well By shaking the container up and down.

Ready to eat with sauce or green chutney.

#Dough

  Mix wheat flour with water and two spoons of ghee and milk add corn flour in little quantity ,baking powder,salt mix well as just as chapathi or roti's dough and keep aside.


Stuffing

Finely chopped and boiled vegetables like carrot,cabbage,peas etc., Now add some turmeric powder,salt,chilli powder,garam masala and mix well
  Spread out dough and add few spoons of stuffing roll it nicely such that stuffing should not fall.
 Heat the oil and fry the roll till the colour changes.
